Vegetarian Lasagna

I am not a vegetarian, but sometimes I don't feel like eating meats or fish for dinner.  But my family likes meats and fish then I make one appetizer of fish or meat and vegetarian main dish.

This is what I made.  It is vegetarian lasagna.  It has eggplants, zucchini, red paprika.  Jut grilled them before you put in the oven.  Then make like normal lasagna.  It tastes good if you make your own tomato sauce which I always do and very simple.  Chopped garlic with olive oil then put one can tomato diced.  Salt and pepper and cook until it became thick for about 20 minutes.

Salmon, Caper and Dill

In Japan, we eat Salmon, but most mainly one is grilled.  There are salty one, sweet one and also you can cook your own style.  We also eat salmon as sashimi, but I think it's not really popular like in another countries.

I like all kind of salmon, salmon steak, grilled salmon with miso paste or yuan style(citrus and soy sauce), but I made this salmon the other day as I have a guest coming over for drink.

Salmon slices, slices of green apples and caper and dill and extra virgin olive oil.  It took 5 minutes!

Fish with Tomato & Basil Sauce

I used to cook this recipe when I was living in Tokyo.  You can get any kind of fish and they are much cheaper and more fresh in Japan so I cooked fish a lot.  It is not the same as Japan, but I can get quite good fish here in Singapore.  This white fish called Dolly fish is common in here so I used this fish instead of Kajikimaguro(Swordfish).

Saute fish with mixed panko with thyme and on 1tsp unsalted butter and 1tsp olive oil.

Sauce is mix with chopped tomato, caper, onion, basil, dijon mustard, mayonnaise and olive oil.

Fried Chicken Japanese style(Torino karaage)

Everyone knows Fried chicken and I think most countries have their own way to make.
In Japan, it is very popular as for a main dish, side dish, snack etc.

I've been making a lot of different kind of taste of fried chicken such as with sesame seeds, miso, curry etc.  But the most popular one is a very simple fried chicken.

1. Cut chicken into small pieces.
2. Soy sauce, Sake or white wine, salt & pepper, chopped garlic and a bit of ginger mix altogether with chicken.

3. Add 1 egg, sesame oil and Katakuriko(corn starch)

4. Mix well and then fry with high about 4-5 minutes. (3 minutes this way then turn over for another 2 minutes or until cooked)

5. Itadakima-su!

Kaiso Salad

Kaiso Salad is dried seaweed (wakame and others).

To prepare: Soak seaweed salad with cold water.  You can buy a package of seaweed salad like this.

Let it sit for approximately 10 minutes until desired tenderness is reached.
Drain well.  I added chopped tomatoes, garlic, red onions and I made dressing (soy sauce, vinegar, sugar and shiso).  It's very healthy and quite full fill so it is great for a diet.

YTT

This is one of my favorite flower tree called YTT.  I asked our gardener why it is called YTT then he told me that "It's always flower there, Yesterday, Today and Tomorrow".  I think it has a real name, but everyone here call this tree YTT.  I am glad that I have this tree in my garden.  It smells also wonderful!
